Lots of folks are pairing mushrooms and coffee these days, why not add another super food…garlic! Try this savory dish ft ingredients from the Caldwell Farm to Fork Farmers Market!
1 lb mushrooms (Fergs Fabulous Fungi)
Lamb chops (Boise River Lamb)
Coffe Spice Rub (Idaho Spice Co.)
Molly’s Idahoan Spice
5 tablespoons butter
Roughly chop the mushrooms.
In a cast iron or heavy pan, add 3T butter to the mushrooms and a generous amount of the Idahoan seasoning. Sauté over medium-high heat until golden.
Rub the lamb chops with the coffee rub.
Remove cooked mushrooms from pan. Melt an additional 2T butter and place lamb chops fat cap side down once butter is hot. Cook on high for 1-2 minutes to render the fat.
Sear the remaining sides of the lamb chops for 2-4 minutes per side.
Once lamb is cooked as desired, remove from heat and serve directly over the mushrooms. Garnish with chives and enjoy!
