Vegetarian BBQ Tacos

You all know I’m not even close to being a vegetarian, but these amazing Lion’s Mane mushrooms take on the flavor of anything and have a very meaty texture. The duo with halloumi cheese makes me completely forget about meat for the day! [ingredients]

Yaya’s Halloumi Cheese
Olivin Olive Oil
Potter’s Chipotle Wine
Molly’s Smokin’ Southern Blend
1. Toast up some fresh corn!
2. Grill or sear the halloumi cheese seasoned with Molly’s Smokin’ Southern Blend
3. Dice the mushrooms and toss them in:
2 tablespoons of BBQ sauce
1/4 cup Chipotle Wine
1/4 cup olive oil
Molly’s Smokin’ Southern
4. Sear the mushrooms over medium/heat. I used a weight to give them a good crust. (These seriously taste like BBQ chicken!)
5. Build your tacos with some sliced peppers for a crunch, top with some more BBQ sauce, and add a squeeze of grilled lime. Enjoy!
