Sunshine Chicken

This easy dinner recipe is only four ingredients for the perfect savory, sweet, and spicy chicken!

Ingredients:

One spatchcock chicken (New to the spatchcock technique? Read this Food and Wine article on how this technique will improve your dish!)

Molly’s Idahoan seasoning (garlic, onion, sea salt, and jalapenos)

Sunshine Sauce (locally made creamy garlic sauce)

Brown sugar

Instructions:

1- Combine Idahoan Seasoning with the brown sugar, making a ratio of 2:1, two parts sugar to one part seasoning

2- Coat the top and bottom of the chicken with Sunshine Sauce

3-Sprinkle the sugar/spice mixture to coat the entire bird.

4-Roast at 350 degrees for 60 minutes, or until internal temperature reaches 165 degrees F. Once finished, let rest for 5-10 minutes. Serve and enjoy!
