Grilled Bean Salad with Prickly Pear Vinaigrette and Deep Fried Egg Yolks

Farmer’s Market delight! All of these ingredients can be found at your local market [ingredients]

St. Anthony’s Extra Virgin Olive Oil
Molly’s A to Z or Idahoan Blend
1. Separate egg yolks and gently set them into the flour and cover with more flour. Place them in the freezer.
2. Peel, mash, and strain the seeds from the Prickly Pear fruit
3. Combine the fruit juice/mash together with mustard, red wine vinegar, diced parsley, olive oil, and Molly’s A to Z or Idahoan Blend
4. Toss the beans in olive oil and more Molly’s Mills
5. Grill over medium/high heat until browned
6. Remove the egg yolks from the freezer (they should be frozen solid) and quickly deep fry them
7. Drizzle the beans with vinaigrette dressing, then top with shaved cheese and fried yolks
8. Enjoy!
