Beef, Beer, and Bacon Chili

This hearty favorite gets an upgrade of flavor!

Ingredients:

1 lb Bacon

1 Yellow Onion

2 lbs Ground Beef – Try Hipwell Ranch or Little Cow Mountain!

Cumin

Paprika (or chili powder)

14 oz Green Chiles

2 Cans of Diced Tomatoes

1 Can Tomato Paste

1 Tablespoon Brown Sugar

Potter Jalapeño Wine

Brook’s Broth – chicken, or chicken stock

1. Dice and sauté the bacon on medium
2. Drain cooked bacon, but leave 1 tablespoon of grease

3. Sauté onions in the grease and add 20 grinds of Idahoan. Cook until translucent

4. Add 2lbs of ground beef and 20 more grinds of Idahoan. Sauté for 15-20 minutes until done

5. Add 1 cup of jalapeño wine and allow to reduce

6. Add 3 tablespoons of cumin and 1 tablespoon of paprika. (If you’re going for spicy, replace the paprika with chili powder)

7. Add 2 cans of green chiles. Simmer until liquid is gone

8. Add 2 cans of tomatoes and 1/4 cup tomato paste

9. Add 2 cans of Evans Gate Beer and 2 cups of chicken stock
10. Simmer for 30 minutes to allow the flavor to develop

11. Add 1/2 of the bacon to the chili
12. Combine the other half of the bacon with 1 tablespoon brown sugar and more Idahoan

13. Put in oven at 350 F for a few minutes until sugar is barely melted into the bacon. Keep your eye on it!

14. Remove from oven and use with other toppings such as cheese, Fritos, and chives. Enjoy!
